Cassoulet

Cassoulet

 

This recipe for Cassoulet is delicious and easy to make in your wood-fired oven, perfect for those cold winter days!

Ingredients:

  • Bacon
  • Pork Sausage
  • Duck Legs
  • Beans
  • Onion
  • Tomato Paste
  • Garlic
  • Bread Crumbs
  • Chicken Broth
  • Celery
  • Carrots
  • Salt
  • Pepper
  • Bay Leaves
  • Olive Oil
  • Rosemary
  • Thyme
  • Parsley

 

Recipe:

  1. Soak the beans in water overnight.
  2. Oil a cast iron pan throughly before coating the duck legs in that olive oil and placing them in the pan.
  3. Sprinkle the bacon, onion, celery, carrots, garlic, salt, pepper and bay leaves over the duck legs.
  4. Put cast iron dish into the oven to sear.
  5. Once the duck legs are nicely colored on both sides, transfer them into a cast iron dutch oven before pouring the rest of the contents of the pan into the dutch oven as well, covering the duck legs before adding the tomato paste.
  6. Pour the chicken broth into the hot skillet, allowing it to help deglaze the fat.
  7. Pour all of the beans into the dutch oven before adding salt, thyme and rosemary.
  8. Add the chicken broth from the skillet into the dutch oven before gently stirring to combine.
  9. Place the sausages on top, allowing the fat to flavor the beans as it melts off.
  10. Cover the dutch oven with a lid and place into the oven at about 250-300 degrees for about 4 hours or until beans are tender.
  11. Add a duck leg, sausage and some beans to a dish, sprinkle bread crumbs across the top and finish in the oven until golden brown.

The skin will taste like bacon, the white meat will remain juicy, and the light smoke flavor is simply delightful.
