BAKED BRIE WITH MAPLE BACON ONION JAM
1 wheel of brie cheese
3/4 cup of Maple Bacon Onion Jam
Preheat oven to 400 degrees.
Maple Bacon Onion Jam
Ingredients. Makes 2 cups
1 lb Bacon, thick cut
2 Sweet onions, large
1-1/2 tbsp Balsamic vinegar
1/2 cup Brown sugar
3 T Maple Syrup
1/3 cup Coffee, strong
Slice and cook the bacon until just before it turns crispy. Remove it, and a little of the fat, from the pan.
Add the onions and let them cook until they're soft. Add the sugar and syrup and let onions caramelize and turn dark brown.
Add some of your leftover morning coffee with splash of some water, and the cooked bacon and let everything simmer until it becomes delicious jam.
Stir a little balsamic vinegar into the jam.
Take rind off of cheese. I used a serrated knife. Place in an oven proof dish and bake for 10 minutes or until cheese is melted.
Take the cheese out of the oven, and top with the jam.
Place in the oven again for 5 more minutes.
Enjoy with some french bread or crackers!
