Roasted Oysters with Cream and Almond Flour

Wood Fired Brick Oven Oysters

 

Ingredients:

9-12 Fresh Oysters in the Shell

6 oz heavy cream

1 finely minced shallot

ÂĽ cup almond flour

several sprigs of fresh chives and some red bell pepper, minced for garnish

Directions:

Preheat oven to 400 degrees.

Make sure oysters are closed before using!

Shuck the oysters.

Keep oysters on ice while shucking remaining oysters (on the half shell)

Place oysters on a rack where they will be stable.

Sprinkle on the minced shallots.

Then pour a small amount of heavy cream over each oyster.

Sprinkle a small amount of almond flour over each oyster.

Roast in a 400 degree oven for approximately 5 minutes (do not overcook).

Garnish with freshly minced chives and red bell pepper to taste (mostly for color) – optional.
