Wood Fired Oven Roasted Duck

Can you think of anything more decadent and also easy to cook than a roast duck?

Ingredients:

  • 1 4-6 lb duck
  • 2 T soy sauce
  • 1 garlic clove, minced
  • 1-1/2 tsp sugar
  • 1 T honey
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 tsp ginger, minced
  • 1 orange (to squeeze after cooking)

Directions:

Preheat your brick oven to about 350-400 F

1) Wash/Dry Duck completely

2) Combine all ingredients, brush outside and inside of duck.  Let stand 1 hour.

3) Roast for approximately 2 hours, turning occasionally. Baste with drippings and a squeeze of 1/2 orange.

4) Let rest for at least 20 minutes before enjoying!

A nice garnish is sliced oranges!

This recipe was.really good but I found mine was done in one hour, not two. I used a meat thermometer to be sure.
