This is us making eclairs.

Here's the recipe

Ingredients Crust:

  • All purpose flour 125 gr
  • water 250 ml 
  • 4 eggs
  • butter 75 gr
  • 1 tbsp of sugar
  • 1 pinch salt 2 gr
  • ¼ cup of parmesan cheese ( for gougere )
  • 1 tsp of pepper ( for gougere )



  1. Heat-up the oven to 450 F
  2. In a saucepan, bring the water to boil and melt the butter
  3. Add the salt and sugar and mix
  4. Add the flour all at once and mix with a wooden spatula
  5. Add the eggs one at a time and mixing vigorously in between each egg
  6. Add the parmesan ( for gougere )
  7. On a cookie tray, using a piping bag, lay the dough about a whole nut size each
  8. Bake for 15 to 20 minutes


Creme Patissiere:


  • 250 ml of milk
  • 2 egg yolks
  • 1 tbs of vanilla extract
  • 55 gr of sugar
  • 20 gr of corn starch


  1. Put milk to boil on the stove
  2. Combine in a bowl the egg yolks and the sugar. Whisk till wite
  3. Add the vanilla mix well
  4. Add the corn starch and whisk well
  5. Pour the hot milk in the bowl and whisk well
  6. Put the mix back in the pot and on the stove till it boils for 30 second, mixing well so it doesn’t stick.
  7. Let it cool down in the fridge


Frosting or napage:


  • 130g chocolate
  • 150g cream
  • 20g butter
  • 1 tbs sugar


  1. Boil cream and sugar and mix
  2. Then pour cream in chocolate
  3. Add butter mix then let cool
