Anne Besset, owner and founder of La Flamme in Oakland,California, wanted to recreate the traditional thin crust pizza of her childhood called "Tartes Fambées”. In French, this traditional dish of Alsace uses a very thin crust, few but savory ingredients; thin sliced onions, Ventreche ( thick cut bacon strip ), cream, mushrooms and more.
Pizza is ready to be served just a few seconds in the wood fired oven fired at 1,000 F.
The oven is the Four Grand Mere 1030 C on a Napa Trailer. The ovens “Work like dream" says Anne and the response from local customers has been fantastic.
