Madeleine

Madeleine Wood Fired Brick Oven

There is nothing like Madeleine to go with your coffee. Here is my recipe for this savory treat.

Ingredients:

  • 115g unsalted butter 
  • 2 large eggs
  • 100g granulated sugar
  • 2 teaspoons lemon zest or 1tsp lemon extract
  • 1 teaspoon pure vanilla extract
  • 115g all-purpose flour*
  • 1/2 teaspoon baking powder
  • 1 pinch salt

 

Recipe:

  1. Preheat the oven to 400 F
  2. With an electric mixer, whisk the eggs and the sugar until it is light and foamy
  3. Add the butter and mix
  4. Mix together in a separate bowl the flour, salt and baking powder
  5. Then fold in with a spoon or spatula the dry mix into the batter, one spoon at a time to keep it foamy
  6. Brush some butter in the mold
  7. Give the mix 30 minutes to rest in the fridge
  8. Spoon in the mix in the mold
  9. Bake for 10 minutes
